Apple Stuffed Mushroom Caps |

Ingredients:
18 large fresh mushrooms
3 tablespoons finely chopped celery
1 tablespoon butter
1/2 cup finely chopped apple
2 tablespoons dry bread crumbs
2 tablespoons finely chopped walnuts
1 tablespoon crumbled blue cheese
1 tablespoon minced fresh parsley
2 teaspoons lemon juice
Instructions:
1. Take stems out of mushroom caps; reserve caps. Finely dice stems saving 1/3 cup.
2. Cook chopped mushroom stems and celery in a frying pan with butter. Mix together mushroom mixture, apples, breadcrumbs, walnuts, blue cheese, parsley, and lemon juice.
3. Arrange mushroom caps on a greased baking sheet; spoon mixture into caps. Bake at 375 degrees F for 15 to 20 minutes or until mushrooms are just tender.
This is a perfect diabetic appetizer and can easily be doubled for large parties.
